3 to pounds chicken thighs
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Preheat the oven to 400 degrees. Prepare a baking sheet with aluminum foil for easier clean up. Mix seasonings together. Rub chicken thighs in olive oil and then rub the seasoning blend into the chicken. Place chicken thighs on the baking sheet and sprinkle with any remaining seasoning. Bake in the oven for 45 minutes or until the chicken reaches an internal temperature of 165 degrees without the thermometer touching the bone.

1 (20 ounce) package chicken thighs
salt and ground black pepper to taste
2 (8.5 ounce) boxes dry corn muffin mix (such as Jiffy®)
1 pinch garlic salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking sheet with cooking spray.
  • Season chicken thighs on all sides with salt, pepper, and garlic salt.
  • Pour corn muffin mix into a shallow bowl. Roll chicken thighs in corn muffin mix until well coated. Transfer coated thighs to prepared baking sheet.
  • Bake chicken thighs in the preheated oven until no longer pink at the bone and the juices run clear, about 35 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).

Kosher salt and freshly ground black pepper, to taste
5 1/2 tablespoons all purpose flour, divided
1 tablespoon canola oil
1 tablespoon unsalted butter
3 cloves garlic, minced
1 small shallot, diced
8 ounces cremini mushrooms, sliced
1 cup chicken stock
2 teaspoons chopped fresh thyme leaves
2 tablespoons chopped fresh parsley leaves

Steps:

  • Season chicken with 1 teaspoon salt and 1/2 teaspoon pepper. Dredge chicken in 4 tablespoons flour until evenly coated. Heat canola oil and butter in a medium skillet over medium heat. Working in batches, add chicken to the skillet in a single layer and cook until golden brown and cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side; set aside. Reduce heat to medium low. Add garlic, shallot and mushrooms, and cook, stirring occasionally, until mushrooms are tender and browned, about 4 minutes; season with salt and pepper, to taste. 1 teaspoon coarse Kosher salt (or ½ teaspoon table salt)

3 pounds skin-on bone-in chicken thighs (8 bone-in thighs, see note below about boneless)
2 tablespoons olive oil

Steps:

  • Preheat oven to 400° F. Set out a 13x9-inch or similar baking dish or line a rimmed baking sheet with foil or parchment paper.
  • In a small bowl, whisk together the seasonings until well combined.
  • Pat the chicken thighs dry with paper towels and place them in the baking dish.
  • Rub both sides of the chicken with olive oil. Sprinkle the seasoning mixture over the chicken, rubbing it on both sides of the chicken thighs. Try to rub some of the rub underneath the skin as well as on top of the skin for the most flavorful chicken. Arrange the chicken thighs skin side up on the pan.
  • Bake in the preheated oven, without moving or turning, until the internal temperature of the thickest part of the chicken (not touching the bone) reaches at least 165° F. This will take about 30-40 minutes, depending on the size of your chicken thighs.
  • If desired, you can broil the chicken for a few minutes to get the skin extra crispy. Be sure to use a broiler-safe baking dish/pan and do not put parchment paper under the broiler.

1/2 teaspoon sesame seeds
2 green onions, thinly sliced
1/4 cup honey
1/4 cup soy sauce
2 tablespoons ketchup
2 cloves garlic, minced
1 tablespoon brown sugar, packed
1 tablespoon rice wine vinegar
1 tablespoon freshly grated ginger
1 teaspoon Sriracha
1 teaspoon sesame oil
1 teaspoon cornstarch
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees F. To make the sauce, whisk together honey, soy sauce, ketchup, garlic, brown sugar, rice wine vinegar, ginger, Sriracha, sesame oil, cornstarch and pepper in a small bowl; set aside.
