ZEBRA BROWNIES

Steps:
- Heat Oven to 350*. Generously grease bottom only of 13x9" pan.
- In small bowl, blend all filling ingredients; beat at medium speed until smooth; about 1 minute.
- Set aside.
- In large bowl, combine all brownie ingredients; beat 50 strokes with a spoon.
- Spread half of the batter in prepared pan.
- Pour cream cheese mixture over batter, spreading to cover.
- Place spoonfuls of remaining batter on top of cream cheese.
- Marble by pulling knife through batter in wide curves, then turn the pan and repeat.
- Bake at 350* for 30-35 minutes.
- DO NOT OVERBAKE.
- Cool; for ease in cutting, refrigerate at leas1 1 hour.
- Cover tightly and store in refrigerator.

ZEBRA BROWNIES
There was a restaurant famous for these in Nebraska, actually they were famous for all their desserts. These were always a family favorite and I've had the recipe for many years. This calls for 9 eggs and no it is not a misprint !

Steps:
- Preheat oven to 350, grease 9x13 pan.
- For the bottom layer, cream butter and 2 cups of sugar.
- Add cocoa and 4 eggs.
- Mix thoroughly on low speed.
- Add 1 cup flour and 1 tsp vanilla, mixing again.
- Pour into pan.
- For the top layer, in a clean bowl mix cream cheese and 1 1/2 cups sugar on high until smooth.
- Add 5 eggs and mix on low speed.
- Add 1 1/2 teaspoons vanilla, 1/2 cup flour mix again.
- Pour this over chocolate layer, swirling a bit to give it a zebra effect.
- Bake 45 minutes or until center sets.

- Make the brownies: Preheat the oven to 350˚. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on all sides; coat with cooking spray. Stir together the flour, cocoa powder, baking powder and salt in a medium bowl. Put the chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring, until smooth; let cool slightly.
- Combine the butter, granulated sugar, brown sugar and water in a medium saucepan over low heat. Cook, stirring, until the butter is melted. Off the heat, whisk in the melted chocolate, then the eggs, one at a time, then the vanilla. Whisk in the flour mixture until just combined. Spread the batter evenly in the prepared pan.
- Bake until a toothpick inserted into the center of the brownies comes out clean, about 25 minutes. Transfer to a rack and let cool 10 minutes in the pan. Carefully remove from the pan using the foil overhang; transfer the brownies to the rack to cool completely.
- Meanwhile, make the frosting: Beat the butter in a large bowl with a mixer on high speed until light, about 1 minute. Add the confectioners' sugar, cocoa powder, milk, vanilla and salt. Reduce the speed to low and beat until combined. Increase the speed to high and beat until light and fluffy, about 5 minutes, thinning with 1 to 2 tablespoons more milk if needed. Spread the frosting on the brownies. Cut into pieces, then decorate with candy eyeballs and sprinkles.

Everybody says their brownies are the best, but these really are the best. They feature the "holy trinity" of brownie perfection-a crispy, flaky top, chewy edges, and a fudgy center. Serve with a glass of ice cold milk.

- Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch square baking dish or pan, then line with parchment paper if desired to make getting the brownies out easier.
- Mix flour and salt together in a bowl; set aside.
- Place chopped chocolate and butter into a heatproof bowl and set over a saucepan with 1 inch of very gently simmering water. When the butter and almost all of the chocolate is melted, stir until smooth. Turn off the heat and set aside.
- Mix sugar and eggs in a mixing bowl with an electric hand mixer until very airy, thick, and creamy, about 5 minutes. Mix in vanilla extract, then slowly drizzle in the melted chocolate mixture, while mixing on high speed.
- Dump in the flour mixture and mix on low speed just until the flour disappears. Use a spatula to transfer the batter into the prepared baking dish and spread as evenly as possible.
- Bake in the center of the preheated oven until a toothpick inserted near the center comes out virtually clean, about 30 minutes. Let cool on a wire rack for 15 minutes. Use a spatula to lightly press down the higher parts of the brownie around the edge of the dish. Let cool to room temperature, 20 to 30 minutes, before removing and cutting into 9 pieces.
