3 medium zucchini
garlic salt (to taste)
1 Tbsp olive oil
1/2 cup Parmesan cheese (grated)
paprika

Steps:

  • Preheat oven to 450 degrees and place a rack inside a baking sheet. If you don't have a rack, just spray the baking sheet with cooking spray and set aside.
  • Trim both ends from the zucchini and slice diagonally into ¼"-thick slices. Arrange the zucchini slices in a single layer on the rack or baking sheet. Sprinkle zucchini with garlic salt and flip each piece so that the garlic salt is on the bottom.
  • Brush tops of zucchini lightly with olive oil and top each slice with Parmesan cheese. Use as little or as much as you would like, then sprinkle lightly with paprika.
  • Bake 10-15 minutes or just until zucchini is soft and Parmesan is melted and bubbly. Remove from oven and allow zucchini to cool about 5 minutes before serving. Season with additional garlic salt if necessary, then enjoy!

1 cup shredded zucchini (drained well)
1 clove garlic (grated fine)
1/3 cup breadcrumbs
1/4 cup grated Parmigiano-Reggiano cheese
1 large egg
2 tablespoons chopped fresh chives ((or 1 tablespoon dried chives))
1 tablespoon chopped fresh parsley ((or 1/2 tablespoon dried))
1 teaspoon chopped fresh basil ((or 1/2 teaspoon dried))
1 teaspoon chopped fresh oregano ((or 1/2 teaspoon dried))
pinch of salt and pepper
tomato sauce (for dipping)

Steps:

  • Preheat oven to 400˚F. Lightly coat a baking sheet with olive oil or non-stick spray. Set aside.
  • Use a box grater to grate the zucchini into a clean towel. Roll up the towel and twist to wring out the moisture.
  • Grate the garlic using the small holes on the box grater.
  • Add the shredded zucchini, garlic, egg, breadcrumbs, parmesan, chives, parsley, basil, oregano, salt and pepper to a medium bowl. Mix well to combine.
  • Shape a tablespoon of the mixture into your hands, pat into small balls, and place on the baking sheet.
  • Bake for 15-18 minutes in the preheated oven until golden. Serve warm with marinara sauce. Recipe makes about 16 bites.

The first time I made them they didn't even get a chance to go cold,as the children and I devoured them.I have since made them to take to our local playgroup end of term party,and once again,children and parents alike loved them.They are so simple and delicious,and a great way to get some extra veggies into your children.Perfect for picnics and lunchbags.I often pack a few in a tub for when we go shopping for child friendly snacks.I should imagine that these would be good served warm with pre dinner drinks or as part of a finger buffet.

1 tablespoon olive oil
1 onion, finely chopped
3 slices rindless bacon, finely sliced
1 large carrot, grated
1 large zucchini, grated
3 eggs
1 cup cheese, grated
1/4 cup cream
1/2 cup self rising flour

Steps:

  • Heat the oil in a large pan and sauté onion until translucent. Add the bacon and fry until it starts to colour. Add the carrot and zucchini and cook for about 2 minutes.
  • Transfer mixture to a bowl to cool.
  • Beat the eggs, cream and cheese together; season to taste.
  • Stir the egg mixture into the cooled zucchini mixture. Stir in the flour.
  • Grease and flour little muffin/bun tins. Spoon mixture into the holes.
  • Bake at 180°C/350°F/Gas 4 for 15-20 minutes.

70g (½ cup) Cheese (Grated)
2 Eggs
4 tbsp Oat Flour
½ tsp Italian Mixed Herbs ((optional add more or less to taste))

Steps:

  • Preheat oven to 180C / 350F / Gas 4 and prepare two baking sheets with parchment paper or a silicone baking sheet
  • Place the zucchini on a clean cloth and squeeze out the liquid into a bowl. (You need to get the zucchini quite dry for the recipe to work)
  • Place the zucchini back in the bowl and mix with the remaining ingredients
  • Form ½ tbsp balls and flatten into rounds onto the baking sheet. (Mine were around ½ cm / ¼ inch thick and I made 21)
  • Bake for approx. 15 mins (until crispy on the sides)

2 cups shredded and patted dry zucchini (from about 2 medium-sized zucchini)
1 1/4 cup plain panko bread crumbs
1 cup shredded cheddar cheese
1 large egg
1/2 cup finely chopped green onion
2 tablespoons chopped dill
1 teaspoon Kosher salt, or to taste
1 teaspoon garlic powder
Ranch, for serving

Steps:

  • Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
  • In a large bowl, stir together the zucchini, panko bread crumbs, cheddar cheese, egg, green onion, dill, and seasonings until well-combined.

1 large zucchini
1/2 cup all-purpose flour (64 grams)
1/2 tsp baking powder (2 grams)
1 tsp garlic powder (3.28 grams)
1/2 tsp onion powder (1.16 grams)
1/2 tsp sweet smoked Spanish paprika (1.20 grams)
1/2 cup cold water (118 ml)
1 cup breadcrumbs (125 grams)
1/2 cup sunflower oil (120 ml)
handful finely shredded Manchego cheese
handful freshly chopped parsley
sea salt
black pepper

Steps:

  • Cut one zucchini into rounds that are between a 1/4 inch (.635 cm) to 1/8 of an inch (.3175 cm) thick, place them all in a single layer and season them with sea salt & black pepper
  • Add 1/2 cup all-purpose flour into a large bowl, along with 1/2 tsp baking powder, 1 tsp garlic powder, 1/2 tsp onion powder and 1/2 tsp sweet smoked paprika, mix the dry ingredients together, then add in 1/2 cup cold water and whisk together until you get a creamy batter with no lumps
  • Add 1 cup breadcrumbs into a separate bowl, season with a 1/4 tsp (1.5 grams) sea salt and mix together
  • Heat a large fry pan with with medium heat and add in 1/2 cup sunflower oil
  • While the oil is heating, coat the slices of zucchini, first into the batter and then into the breadcrumbs, making sure they are evenly coated
  • After heating the oil for about 5 minutes, start adding the coated slices of zucchini into the pan, make sure they´re all in a single layer, cook in batches, after 75 to 90 seconds flip to cook the other side, after another 75 to 90 seconds remove them from the pan and transfer to a dish with paper towels
  • While the zucchini bites are still hot, finely shred in some Manchego cheese over them
  • Continue to cook your zucchini in the same method until done
  • Once all the zucchini bites are ready, sprinkle them with freshly chopped parsley and serve at once, enjoy!

1-2 tablespoons olive oil
2 medium zucchini ((chopped small))
1 clove minced garlic
1/4 cup water
3/4 cup shredded firm mozzarella ((1 cup if you like it extra cheesy))
2 tablespoons freshly grated parmesan cheese
1 egg ((large))
1/4 cup + 2 tablespoons bread crumbs
1-2 tablespoons fresh chopped Italian parsley
1/4 teaspoon salt
1-2 dashes pepper
1/4 cup bread crumbs ((approximately for rolling))

Steps:

  • In a medium frying pan add the olive oil, chopped zucchini, minced garlic, salt and water. Cook covered on medium low heat for approximately 10-15 minutes (make sure the zucchini does not brown, you want it tender), remove cover and continue to cook on low until the water has evaporated and zucchini is tender.
  • Then remove from heat place in a large bowl and squish with a fork. To the bowl add the shredded mozzarella, parmesan cheese, egg, bread crumbs (1/4 cup + 2 tablespoons), parsley and pepper, combine gently until compact.
  • Form into 19 balls, then roll the zucchini balls in the 1/4 cup of bread crumbs, place on a plate, cover with plastic and refrigerate for at least an hour**.
  • Remove from the fridge and either deep fry in hot oil (350 F / 180 C) until golden, or pan fry in a little hot oil, turn once or twice until golden, or bake in a pre heated 350F / 180C oven for approximately 25-30 minutes. Sprinkle with a little salt before serving. Enjoy/!

2 tablespoons extra-virgin olive oil
½ medium onion, diced
3 large cloves garlic, crushed
1 (15 oz/425 g) can crushed tomatoes
1 teaspoon dried Italian herb seasoning
¼ teaspoon crushed red pepper flakes
¼ teaspoon salt
⅛ teaspoon black pepper
2 tablespoons avocado oil
1½ lbs (680 g/2 medium-ish zucchini) zucchini, sliced into ½-inch thick rounds (about 24 to 28 rounds)
28 slices turkey pepperoni
1 cup (4 oz/115 g) shredded mozzarella
4 tablespoons black olives, chopped
4 tablespoons minced red onion and/or green bell pepper
1 batch Quick Tomato Sauce (you will have extra)

Steps:

  • For the quick tomato sauce, heat the oil in a 1¾-quart saucepan over medium heat. Add the onion and cook until softened, about 3 to 5 minutes, stirring occasionally. Add the garlic and cook 1 minute more, stirring constantly. Stir in the crushed tomatoes, Italian herb seasoning, crushed red pepper flakes, salt, and black pepper. Bring to a simmer and cook (uncovered) until the sauce is thickened, about 3 to 5 minutes, stirring frequently.
  • For the zucchini bites, add the avocado oil to a 10-inch frying pan over medium heat. Add the zucchini slices in an even layer on the bottom (being careful not to crowd the pan) and cook until golden, about 2 minutes per side. Transfer the cooked zucchini to a plate and set aside for now. Cook the remaining zucchini the same way.
  • Preheat the broiler.
