Steps:
- Preheat oven to 450 degrees and place a rack inside a baking sheet. If you don't have a rack, just spray the baking sheet with cooking spray and set aside.
- Trim both ends from the zucchini and slice diagonally into ¼"-thick slices. Arrange the zucchini slices in a single layer on the rack or baking sheet. Sprinkle zucchini with garlic salt and flip each piece so that the garlic salt is on the bottom.
- Brush tops of zucchini lightly with olive oil and top each slice with Parmesan cheese. Use as little or as much as you would like, then sprinkle lightly with paprika.
- Bake 10-15 minutes or just until zucchini is soft and Parmesan is melted and bubbly. Remove from oven and allow zucchini to cool about 5 minutes before serving. Season with additional garlic salt if necessary, then enjoy!

- Preheat oven to 400˚F. Lightly coat a baking sheet with olive oil or non-stick spray. Set aside.
- Use a box grater to grate the zucchini into a clean towel. Roll up the towel and twist to wring out the moisture.
- Grate the garlic using the small holes on the box grater.
- Add the shredded zucchini, garlic, egg, breadcrumbs, parmesan, chives, parsley, basil, oregano, salt and pepper to a medium bowl. Mix well to combine.
- Shape a tablespoon of the mixture into your hands, pat into small balls, and place on the baking sheet.

The first time I made them they didn't even get a chance to go cold,as the children and I devoured them.I have since made them to take to our local playgroup end of term party,and once again,children and parents alike loved them.They are so simple and delicious,and a great way to get some extra veggies into your children.Perfect for picnics and lunchbags.I often pack a few in a tub for when we go shopping for child friendly snacks.I should imagine that these would be good served warm with pre dinner drinks or as part of a finger buffet.

Steps:
- Heat the oil in a large pan and sauté onion until translucent. Add the bacon and fry until it starts to colour. Add the carrot and zucchini and cook for about 2 minutes.
- Transfer mixture to a bowl to cool.
- Beat the eggs, cream and cheese together; season to taste.
- Stir the egg mixture into the cooled zucchini mixture. Stir in the flour.

- Place the zucchini on a clean cloth and squeeze out the liquid into a bowl. (You need to get the zucchini quite dry for the recipe to work)

- Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
- In a large bowl, stir together the zucchini, panko bread crumbs, cheddar cheese, egg, green onion, dill, and seasonings until well-combined.
- One tablespoon at a time, press the zucchini mixture into small balls. Place onto the baking sheet and repeat until all of the zucchini mixture has been used up.

CRISPY ZUCCHINI BITES

- Cut one zucchini into rounds that are between a 1/4 inch (.635 cm) to 1/8 of an inch (.3175 cm) thick, place them all in a single layer and season them with sea salt & black pepper
- Add 1/2 cup all-purpose flour into a large bowl, along with 1/2 tsp baking powder, 1 tsp garlic powder, 1/2 tsp onion powder and 1/2 tsp sweet smoked paprika, mix the dry ingredients together, then add in 1/2 cup cold water and whisk together until you get a creamy batter with no lumps
- Add 1 cup breadcrumbs into a separate bowl, season with a 1/4 tsp (1.5 grams) sea salt and mix together
- Heat a large fry pan with with medium heat and add in 1/2 cup sunflower oil
- While the oil is heating, coat the slices of zucchini, first into the batter and then into the breadcrumbs, making sure they are evenly coated
- After heating the oil for about 5 minutes, start adding the coated slices of zucchini into the pan, make sure they´re all in a single layer, cook in batches, after 75 to 90 seconds flip to cook the other side, after another 75 to 90 seconds remove them from the pan and transfer to a dish with paper towels
- While the zucchini bites are still hot, finely shred in some Manchego cheese over them
- Continue to cook your zucchini in the same method until done
- Once all the zucchini bites are ready, sprinkle them with freshly chopped parsley and serve at once, enjoy!

- Bolognese Sauce: Place your onion and garlic into a Pot and using olive oil caramelize for few minutes.

CHEESY ZUCCHINI BITES
Steps:
- In a medium frying pan add the olive oil, chopped zucchini, minced garlic, salt and water. Cook covered on medium low heat for approximately 10-15 minutes (make sure the zucchini does not brown, you want it tender), remove cover and continue to cook on low until the water has evaporated and zucchini is tender.
- Then remove from heat place in a large bowl and squish with a fork. To the bowl add the shredded mozzarella, parmesan cheese, egg, bread crumbs (1/4 cup + 2 tablespoons), parsley and pepper, combine gently until compact.
- Form into 19 balls, then roll the zucchini balls in the 1/4 cup of bread crumbs, place on a plate, cover with plastic and refrigerate for at least an hour**.
