ZUCCHINI FLAN
Zucchini flan makes a good brunch, lunch or light supper dish. For the best texture, be careful not to overbake; remove from the oven when the custard is still a little jiggly. The flan tastes best served at room temperature.

Steps:
- Heat oven to 375. Bring a large pot of salted water to boil. Add zucchini and blanch for 1 minute. Drain and spread zucchini out to cool on a towel. Season lightly with salt and pepper.
- Beat eggs and milk with 1/2 teaspoon salt, then add nutmeg, thyme and basil leaves.
- Butter a 2-quart low-sided baking dish, and arrange blanched zucchini over bottom. Scatter cheese over zucchini, then pour in custard.
- Bake for 30 minutes or until custard is still a bit jiggly, but an inserted knife comes out clean. Cool to room temperature before serving.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 8x4 inch loaf pan.
- In a large bowl, mix together zucchini, onion, cheese, eggs, oil, and self-rising flour. Spread mixture into prepared pan.

Stuffed zucchini-a hearty and nutritious vegetarian dish-is perfect for fall.

Steps:
- Preheat oven to 425 °F
- Halve the zucchini lengthwise and scrape out the center flesh, making hollow boats
- Finely chop the scraped squash and reserve
- Spray the zucchini boats or drizzle them with oil and season with salt and pepper
- Roast them cut-side down on a baking sheet for about 15 minutes
- Remove from oven and let cool
- Place breadcrumbs on a small baking sheet and brown in the oven until deep golden and nutty in fragrance
- Remove and leave oven on
- Heat a skillet over medium-high heat with EVOO, 3 turns of the pan
- Add mushrooms and cook until deeply brown
- Add reserved chopped zucchini, shallots, garlic, salt, pepper and thyme, and stir 5-7 minutes more to lightly brown the zucchini
- Add tomatoes and basil, and stir 1 minute
- Add toasted breadcrumbs and stir to combine so the breadcrumbs soak up the cherry tomato juice; add the cheese
- Loosely fill the zucchini with the stuffing, mounding it slightly on the top
- Pour the tomato sauce on the bottom of 2 casserole dishes and arrange the zucchini in the dishes
- Bake 20-25 minutes to set stuffing and heat sauce
ZUCCHINI GALORE
Yummy sauteed zucchini with other veggies you can find in your fridge!! Very tasty and healthy!! I sometimes add a drop of wine to give it a little more taste. Note: you can add as many vegetables as you like, but this dish can also be tossed in with pasta, if tossing with pasta, just add a lot more olive oil.

- Preheat oven to 180C / 360F and line baking tray (6x12inches / 15x30cm) with baking paper
- Whisk eggs in a large mixing bowl. Add flour and baking powder and mix until smooth.
- Add grated zucchini, onion, cheese, olive oil, eggs, salt and pepper, and mix together until well combined.
- Pour mixture into tray and place in oven for 35-40 minutes or until fully cooked through and slightly browned on top.
- Cut into 9 slices and serve on it's own or with some hummus on top!

- Preheat the oven to 425°. In a large skillet, heat 1 tablespoon of oil over moderately high heat. Add the leeks and cook, stirring occasionally, until softened, about 3 minutes. Add the wine and cook until evaporated, about 2 minutes. Spread in a 9-inch round baking dish
- Meanwhile, on 2 large baking sheets, spread the zucchini and yellow squash and brush with the remaining 3 tablespoons of oil; season with salt and pepper. Sprinkle with the cheese and let sit until slightly softened, about 5 minutes.
- Tightly roll 1 piece of zucchini and set it on the leeks in the center of the dish. Working outward from that center slice, continue rolling and coiling additional pieces of zucchini and yellow squash until you reach the edge of the baking dish. Season the tomato slices with salt and pepper, then tuck in intervals between the zucchini and squash. Scrape any cheese off of the baking sheets and sprinkle on top.
- Bake for 30 minutes, until the zucchini and squash are tender and browned in spots. Sprinkle with sea salt. Let cool slightly, then serve with crusty bread.
